In a pot of boiling water, cook the lobsters for 8 minutes. Once partially cooked, remove from the pot of water, crack the shells, remove the meat and chop it into bite size pieces.

In a pan, fry the bacon until crispy. Remove the bacon from the pan and sauté the lobster in the leftover bacon fat. Cook over medium-high heat for 3-4 minutes. Season to taste with salt and pepper.

In a food processor, blend the bell peppers, jalapenos, garlic, lime juice and cilantro. Once the puree is smooth, blend in the mayonnaise.

Grill the flatbread on the grill, or toast in a 400°F oven for several minutes, until lightly toasted. Cut the slices of bread in half.

To build the sandwich, spread a generous amount of the pepper spread onto each piece of flatbread, layer with lettuce leaves, crispy bacon, sliced avocado and tomato and the hot lobster. Serve immediately.
