- 2 snapper, or light white fish fillets
- 6 Tbsp. Mezzetta® Italian Mix Giardiniera, reserve juice and mince
- 2 garlic cloves, minced
- 1 cup fresh mushrooms, sliced
- 1/2 cup Mezzetta® Sliced Sweet Cherry Peppers
- 1/2 cup heavy cream
- 1 Tbsp. butter
- 2 tsp. fresh parsley, finely chopped

preparation
Preheat oven to 350°F.
Place the fish on a plate and season with salt and pepper. To a medium sized pan add the minced giardiniera with some of the juice, along with the mushrooms, garlic, and sliced sweet cherry peppers.
Cook for 3 to 5 minutes, stirring often, and adding more juice if necessary. Stir in the cream and butter; let cool.
Once the sauce is cool, pour into an oven proof dish and lay the fish on top; bake for about 10 minutes.
Garnish with parsley and serve.
