Sauté the yellow onion with 1/8 c. olive oil.

Cook for several minutes, until the onions begin to soften.

Remove from the heat and place into a bowl.

Add the apples with 1/8 c. olive oil to the pan and sauté for 5 minutes, until softened but not mushy

Remove from the heat and add to the bowl with the onions.

Add the additional ingredients, stir to combine.

Refrigerate for at least 30 minutes, or over night.

Serve chilled or room temp on top of the Grilled Pork Chops.
